“Oh Fudge”

Ingredients:

  • 2 Cups Sugar
  • 3 Squares Unsweetened Chocolate
  • 1/2 Cup White Karo Syrup
  • 1/2 Cup Milk
  • Pinch Salt
  • 1 Cube Butter
  • 1 Teaspoon Vanilla

Directions:
Bring first five ingredients to a “soft ball” stage.
Remove from heat.
Add butter and let set for one hour.
Beat by hand until thick and smooth.
Add vanilla and chopped nuts.
Drop teaspoon on waxed paper.

Pecan Pie

Ingredients:
1 Cup Karo Light Corn Syrup
3 Eggs
1 Cup Sugar
2 Tablespoons Melted Butter
1 Teaspoon Vanilla Extract
1 1/2 Cups (6 oz) Pecans
1 Unbaked 9 Inch Deep Dish Pie Crust

Directions:
Stir together the first 5 ingredients in mixing bowl.
Mix in pecans.
Pour into pie crust.
Bake on center rack for 60-70 minutes.
Cool for two hours.

Angle Food Cake

Ingredients:
1 angle food cake mix
1 bag chocolate chip
2 pints whipping cream
1 cup sugar

Directions:
Bake cake according to directions on box.
Let cool.
For frosting: Melt chocolate chips over double boiler. Let cool off a bit.
Whip cream and sugar until you have made whipped cream.
Fold in chocolate and 1 teaspoon vanilla.
Cut cake into three layers.
Spread frosting onto cake layers and fill center.
Keep in refrigerator.

Nanmino Bars

Ingredients: 

  • 1 Egg
  • 1/4 Cup Sugar
  • 2 Tablespoons Cocoa
  • 1/3 Cup Butter
  • 1/2 Cup Coconut (Angel Flake)
  • 1/2 Teaspoon Vanilla
  • 2 Cups Graham Cracker Crumbs
  • 1/2 Cup Walnuts
  • 1/4 Cup Butter
  • 2 Tablespoons Vanilla Pudding Mix (NOT INSTANT)
  • 3 Tablespoons Milk
  • 1/2 Teaspoon Vanilla
  • 2 Cups Powdered Sugar
  • 2 Squares Semi-sweet Chocolate(NOT Unsweetend)
  • 1 1/2 Tablespoons Butter

Directions:
Place first four ingredients in top of double broiler over hot heat.
Stir until butter melts
Take off heat and add next 4 ingredients.
Mix well.
Pack in 9″ square pan and refrigerate.
Cream together butter and pudding mix.
Add milk, vanilla and sugar and mix well.
Spread over the first mixture in the pan.
Melt chocolate and butter in top of double broiler.
When melted pour at once over top of above mixtures and chill in refrigerator.
Serve in small squares.
Keep refrigerated.

Homemade Brownies

1 Cup Butter
2 Cups sugar
4 Squares Unsweetened Chocolate
1 Cup Flour
4 Eggs, beaten
Vanilla
Salt
Chopped Walnuts (Optional except when Dad maks them)
Semi Sweet Chocolate Chips

Directions
Preheat oven to 350. Melt first three ingredients int a double broiler. Mix next four ingredients together in an all clad mixing bowl. Once nicely mixed add melted mixture and nuts (however, Neila thinks brownies are chewiest without the nuts). Stir up.

Put in a buttered baking dish. Bake for about 25 minutes. Test with fork. DO NOT OVERBAKE! Sprinkle chocolate on top and spread like icing.
